Day Three

In honor of the Kentucky Derby on Saturday, we had some delicious Derby pie. This was the last piece that I enjoyed today!

DERBY PIE
1 stick butter (not margarine) – softened
1 cup sugar
1 tsp vanilla (pure, not imitation)
2 eggs – slightly beaten
½ cup flour
1 cup chocolate chips (semi-sweet or dark)
1 cup pecans
Cream the sugar and butter, add vanilla and eggs – blend well. Then add flour. When well mixed, add chips and pecans.
Pour into a deep dish pie shell. Bake at 350 degrees for 45 minutes.
Best served warm with whipped cream or ice cream.
